New York City Chef Puts Healthy Spin On Soul Food

A growing movement to reinvent soul food in the city is looking to turn the fried southern cuisine NY1's Cheryl Wills filed the following report.

Soul food is so popular that movies have been named for it. But the legendary southern cuisine "Soul food has gotten a bad rap, it's not the food itself, it's really the preparation," says American Diabetic Association spokesperson Constance Brown-Riggs. Brown-Riggs, who is also the author of "The African-American Guide to Living Well with Diabetes," says the fat back, pig knuckles, butter, salt, sugar and lard And that's where Eco Chef Love - as she is known - comes in. "I knew it had to look good and taste better to open minds Folks who recently took part in a taste test in Manhattan say the southern cuisine still has plenty of soul. She also watched her beloved mother die of complications from diabetes. Now she's a vegan,
meaning she eats no meats or dairy products, and is spearheading a movement to turn soul food
green.

waffles, but with a healthy twist. The waffles are made of corn and they're grilled not fried. And the vegan barbeque chicken is smothered with sauce that is not loaded with molasses and sugar. Instead, it's made
with agave. She even dares to make mac and cheese, with gluten-free (macaroni and vegan) cheese.
"Mac & Cheese is like the one thing. Once you go into vegan you kinda have to leave that behind but
that fooled me," said one taste tester.

The makers of the award-winning documentary CRUDE, which chronicles the inside story of the largest and most controversial environmental lawsuit on the planet--a 17-year, $27 billion struggle between 30,000 Ecuadorean rainforest dwellers and Chevron--are currently embroiled in a legal battle with Chevron, who has subpoenaed the CRUDE filmmakers and the nearly 600 hours of raw footage accumulated during the production. Our attorneys at Frankfurt Kurnit have argued that our footage is protected by the journalist's privilege, and forcing us to hand it over to any third party (either Chevron, the plaintiffs' lawyers, or anyone else) is a violation of our First Amendment rights.
On May 6th, a US District Court ruled in Chevron's favor, creating a frightening precedent that we and many of our esteemed colleagues--from Bill Moyers to Michael Moore--agree will have a chilling effect on investigative journalism and documentary filmmaking as we know it. In an effort to protect the footage, his sources, and his process, Berlinger immediately appealed, and on June 8th, a three-judge panel of the US Court of Appeals for the Second Circuit ruled that Berlinger will be awarded a full hearing in July on his appeal. As a result, the District Court’s May 20th order directing Berlinger to produce the footage will be suspended during the pendency of the appeal.
As the battle to defend our First Amendment rights presses on, our mounting legal fees are extraordinarily costly. As the third-largest corporation in America, Chevron has far more financial resources at its disposal than we do. We have set up this Kickstarter page as a way for our supporters to help us raise funds for our defense against Chevron and stand up in favor of the future of documentary filmmaking and investigative journalism.

Stephanie Smith "A Minnesota woman who became paralyzed after eating a hamburger contaminated with a virulent strain of E. coli reached a settlement with Cargill, Inc.The agribusiness giant said in a statement that it “deeply regrets” Stephanie Smith’s injuries and had acknowledged responsibility for them since first learning of them and has been providing financial help to her and her family.
Smith, a 22-year-old former dance instructor from Cold Spring, Minn., had filed the lawsuit in December. Cargill agreed in the settlement to provide for Smith's care for life.

"Stephanie Smith still hopes to dance one day."
"This settlement will allow Stephanie to continue her fight to return to her greatest passion, dance," said William Marler, Smith's attorney. The parties' settlement will be presented to the federal court for approval and dismissal of all claims.
Last October, the New York Times detailed Smith’s severe injuries she suffered as a result of an E. coli O157:H7 infection in fall 2007.
The article also showed how America's complex, and seemingly unsupervised, industrial beef production system provides
cover for grinders of raw beef materials selling to packers, and the lack of testing in the supply chain for deadly pathogens.
Agriculture Secretary Tom Vilsack responded to the article with this statement: "The story we learned about over the weekend is unacceptable and tragic. We all know we can and should do more to protect the safety of the American people and the story in this weekend's paper will continue to spur our efforts to reduce the incidence of E. coli O157:H7.”

A global shift towards a vegan diet is vital to save the world from hunger, fuel poverty and the worst impacts of climate change,
a UN report said today (Click this link to read the U.N. Report).
As the global population surges towards a predicted 9.1 billion people by 2050, western tastes for diets rich in meat and dairy products are unsustainable, says the report from United Nations Environment Programme's (UNEP) international panel of sustainable resource management.
It says: "Impacts from agriculture are expected to increase substantially due to population growth increasing consumption of animal products. Unlike fossil fuels, it is difficult to look for alternatives: people have to eat. A substantial reduction of impacts would only be possible with a substantial worldwide diet change, away from animal products."
